Today I happened across an interesting bit of news. It’s officially soft shell crab season in New England. Only a few times a year can you get really great soft shell blue crabs. My boss told me the news today, and I couldn’t resist picking up a few and cooking them my special way.
What you need:
- A large soft shell blue crab
- An egg
- Flower
- Your favorite white wine
- A stick of butter
- Lemon
- Garlic
Cooking them is real easy:
- Melt the stick of butter in a frying pan with a minced garlic clove. Bring it to a simmer.
- Mix up the egg really good in a bowl.
- Dip the crab in the egg, and make sure you get an even coating.
- Drop the crab into a plastic bag filled with flour and shake it around.
- Take the crab out of the flower bag and drop it in the simmering butter.
- Add a little wine and a little lemon on top of the crab as it cooks.
- Cook it on 3 minutes, flip, and cook the other side on three minutes.
Done! The soft shell crab has a very delicate flavor and thus you must use butter instead of olive oil or even worse vegetable oil. I’ve cooked this dish many times and many different ways, and I truly believe this is the best soft shell crab recipe.
